Dialce’s production process is highly versatile, blending modern technology with time-honored traditions.
We operate two facilities: one featuring raw agave milling and another incorporating both autoclave cooking and traditional masonry ovens. This dual approach allows us to process agave in multiple ways, enhancing the complexity of our tequila. After milling, the agave is processed using a masa mill and a diffuser to efficiently extract the juice. The extracted juice is then distilled using both traditional pot stills and modern column stills.
This combination of distillation methods enables us to achieve a wide array of flavor profiles—from the rich, robust character of cooked agave to fresh, herbal notes that appeal to diverse palates. In every bottle, we capture the perfect balance of efficiency and tradition, delivering a tequila that upholds the highest standards of quality and craftsmanship.
